Black Bean Corn Salad
This dish was first introduced to me by a Surgery Resident wife at one of my Husband’s big “barbque” parties he throws every 1-2months. The taste was wonderful, refreshing and didn’t leave you feeling bloated or uncomfortable afterwards. The best part- it’s easy! Rinse, dice, combine, refrigerate, and your done!
1-2cans of black beans, rinsed and drained
1 can corn, rinsed and drained
1 hand full of cilantro, finely chopped
1 package of cherry tomatoes, quartered
1-2 bell peppers, diced
1 onion, diced
2-3 fresh squeezed key limes
Grilled chicken with salad, salsa mixture, and avocado
I typically make a huge bowl of it for John and I weekly and add the mixture to whatever we have for the day-
- Lunch- whole wheat wrap, black bean/ corn salsa, and add a high protein meat like grilled chicken, fish, or tempeh.
- Dinner- we typically use it as an addition to our salads by chopping up some fresh greens then getting a big spoon full of the black bean/ corn salsa and pouring it over. Tasty!
